Happy New Year, everybody! I wanted to share an easy Korean recipe with you today. It’s called “Tteokguk” which translates directly to rice cake soup. Don’t let the name fool you, there are so many other goodies in there that it’s not only rice cakes but it’s also Korean dumplings called mandu, meat (traditionally beef but I opted for chicken this time), and egg. The Korean dumpling recipe is in a previous post and can actually be eaten on its own. The recipe is a veggie based filling but traditionally these are filled with pork or beef.
