4 Ingredient Coconut Covered Date Balls Recipe

I have been noticing my main meals during the day are pretty healthy; however, my problem has always been in the snack department. I snack on everything but mostly some sort of protein/nut/granola/date bar. So upon doing some reading and realising how awful sugar is for your body (some of the nutrition bars can basically just be big, gigantic chocolate bars!), I wanted to make a simple, no fuss, sugar free treat that can act as a snack or a mini dessert.

I’m telling you these coconut date balls are the easiest thing EVER. I made one batch but still have remaining dates so will definitely be making another batch soon. Probably tonight 😛

This will make about 12 date balls. Will literally take you 5-10 minutes to prepare and clean everything. So easy!

First, the ingredients:

  1. 1/2 Cup Unsweetened coconut flakes (I purchased an already shredded package but to be cost effective you can buy the flakes and they’ll be a little cheaper)
  2. 1 1/2 Tbsp Coconut oil
  3. 1/3 Cup Cashews
  4. 10 Medjool Dates
  5. 1 1/2 Tbsp Water – Ok there’s 5 ingredients but water doesn’t count 🙂

Date balls ingredients

Put the cashews into a food processor and pulsate for 10 seconds. So it is a bit like the texture below.date-balls-cashew

Add, pitted dates, 1/4 coconut flakes (save the rest on the side so you have enough to roll the date balls in), 1 1/2 Tbsp coconut oil and water.

You should have to process this for about another 30-45 seconds so that all of the ingredients are appropriately processed and mixed well.

Scoop up the mixture with a mini ice cream scooper (or you can use a tablespoon) so that you can ensure that all the balls are the same size.

Once rolled around, put these balls into the leftover coconut flake mixture.


Store in the fridge for at least an hour (I made these at night and kept them overnight).
