Korean Rice Cake Soup Recipe

Happy New Year, everybody! I wanted to share an easy Korean recipe with you today. It’s called “Tteokguk” which translates directly to rice cake soup. Don’t let the name fool you, there are so many other goodies in there that it’s not only rice cakes but it’s also Korean dumplings called mandu, meat (traditionally beef but I opted for chicken this time), and egg.  The Korean dumpling recipe is in a previous post and can actually be eaten on its own. The recipe is a veggie based filling but traditionally these are filled with pork or beef.

Cancer. I had it. And then I didn’t. It was a very surreal emotional roller coaster I was on earlier this year. I’m happy to be closing out 2018 with that part of my journey in the past. While the diagnosis, surgery, and recovery all occurred within a matter of a few months (thankfully!) I walked away with a whole long list of what I learned about myself. I’m back with another Korean recipe from my umma (‘mom’ in Korean!). Kimbap literally means “seaweed” “cooked rice” – which doesn’t sound all that fancy but what makes it delicious is all of the veggies and goodies inside this seaweed wrapped rice roll. You can absolutely use beef as one of the ingredients inside but if you’re more plant based you can omit and it tastes just as delicious!
